RECIPES Basic Yeast Donut Recipe 2 tablespoons warm water 1 package (or 2¼ teaspoons) active dry yeast ¾ cup milk 2 ²/³ tablespoons shortening or butter ¼ cup sugar ¹⁄³ teaspoon salt 1 egg 2½ cups flour Canola oil Additional flour for board 1. Pour warm water (105-115°F) into the bowl of a mixer. Sprinkle yeast on top of water. Stir gently to moisten yeast and let sit until a bubbly, yeast foams across top of water. Time will vary according to room temperatures. 2. Heat milk gently, just enough to melt the shortening. Let milk cool (to less than 115°F so as not to kill the yeast) and add to the yeast. Add sugar salt, egg and half of the flour. Mix until fully incorporated. Add remaining flour and beat until flour is fully incorporated and dough starts to clean the bowl. Dough will be sticky and stick to the bottom of the mixing bowl. 3. Gently form dough into a ball and place into a large oiled bowl (canola oil). Cover the entire outer surface of the dough ball with oil. Cover and let rise for approximately 1 hour, or until dough has at least doubled in size. 4. Gently, so as not to lose air, transfer dough to a well floured board. Using a 2¼ inch biscuit cutter, cut doughnuts and use a 1 inch cutter to cut the holes. * 5. Let doughnuts rise again, until soft and puffed and place in Sunbeam Flip Donut Maker, which has been brushed with canola oil and preheated until ready light illuminates. 6. Cook for 5 minutes. Remove doughnuts with potholder.
