Steak Chart The SEAR function grills steaks to perfection. Here is a simple guide to cooking to your personal preference. We give instructions for grilling the steaks in the Closed position, but they can easily be done in the Open position as well - just flip the steaks halfway through, and remember to always monitor the temperature. Steak Doneness Rare (120-125°F) Medium-Rare (130-135°F) Medium (140-145°F) Medium-Well (150-155°F) Well (160°F+) Preparation Plate and Position Up to 2 inches thick. Season to taste.
