OVEN CONTROLS Convection Cooking This mode of cooking enables you to obtain the best results when baking with multiple pans and racks. The oven can be programmed for convection baking at any temperature between 170°F to 550°F with a default temperature of 350°F. The convection fan will turn on after 6 minutes and remain on during the convection baking process. The convection function uses a fan to circulate the oven heat uniformly and continuously around the oven (Figure 16). This improved heat distribution allows for fast, even cooking and browning results. It also gives better baking results when using two oven racks at the same time. Benefits of convection cooking: • Multiple rack baking. • Some foods may cook faster. Convection baking tips: • Fully preheat the oven before baking items like cookies, cakes, biscuits, and breads. For best results baking cookies use convection bake function. • If your recipe cooking temperature has not been converted for convection baking, see "Setting Convection Convert" on page 19 for further instructions on temperature conversion. • When using any single rack, position the rack so that the food is in the center of the oven. • For best results when baking cakes using two oven racks, place racks in positions 6 with offset rack and 1 using Glide rack (See Figure 16). • When baking using two oven racks, position cookware as shown in Figure 17. Allow at least 2 inches (5 cm) of space between cookware for proper air circulation. • Dark or dull bakeware absorbs more heat than shiny bakeware. It may be necessary to reduce oven temperature and cook time to prevent overbrowning of some foods. Dark bakeware is recommended for pies. Shiny bakeware is recommended for cakes, cookies, and muffins. • Do not open oven door too often. Doing so reduces oven temperature and may extend cooking time. • Most baked goods (except cakes) should be baked on pans with no sides or low sides to allow air to circulate. Setting Convection Bake This mode of cooking enables you to obtain the best results when baking with multiple pans and racks. The oven can be programmed for convection baking at any temperature between 170°F to 550°F. To set the oven for convection bake and temperature to 350°F: 1. Arrange interior oven racks. 2. Turn the oven mode selector to CONVECT BAKE. 3. Turn the oven temperature selector to 350°F. 4. The convection fan will turn on 6 minutes after the oven begins heating. Once the oven reaches the set temperature the oven will sound a chime indicating the food items can be placed in the oven. 5.
