Easy Creamy Guacamole Use as a dip, sauce, topping or side dish. Makes about 1 cup 1 avocado, ripe, peeled, seeded, cut into 3⁄4-inch pieces 2 tablespoons fresh lemon or lime juice 1⁄2 clove garlic, peeled and smashed 1⁄2 teaspoon kosher salt or to taste Put all ingredients in mixing cup. Insert hand blender, pressing blade into the avocado pieces, and blend on Low until mixture begins to soften, about 15 to 20 seconds. Continue processing with a gentle up-anddown motion until desired texture is reached, about 20 to 30 seconds longer. Transfer to a decorative bowl to serve with tortilla chips.
