4 Operating your product Reducing the pressure in foods Many food items are covered with skin of shell. They may crack due to the pressure that builds up during cooking. To avoid this, the skin or shell must be punctured with a fork or knife. This process must be applied to potato, chicken liver, egg yolk, sausage and some fruits.
