Special Modes Dehydrate This program is designed for traditional drying of food to preserve it. The temperature can be set between 175-250°F (80-100°C). It is important that fruit and vegetables are ripe and not bruised before they are dehydrated.  Prepare the food for dehydrating. - Peel and core apples, and cut into slices 1/4" (.5 cm) thick. - Core plums if necessary. - Peel, core and cut pears into wedges. - Peel and slice bananas. - Clean mushrooms, then either halve or slice them. - Remove parsley and dill from the stem.  Distribute the food evenly over the roasting pan. You can also use the Gourmet perforated baking tray, if you have one. Food Fruit Vegetables Herbs *  [min] 120-480 180-480 50-60  Dehydrating time * Because this program uses the fan, you should use Surround mode  set to a temperature of 175-250°F (80-100°C) for drying herbs.  Reduce the temperature if condensation begins to form in the oven.  Danger of burning! Use pot holders when removing the food from the oven.  Allow the fruit or vegetables to cool down after dehydrating. Dried fruit must be completely dry, but also soft and elastic. Juice should not escape when cut.  Store in sealed glass jars or tins.  Select Special Modes .  Select Dehydrate.  If necessary, adjust the recommended temperature and set the duration.  Follow the instructions in the display. 126
