Sushi Rice Greek Salad Usually made with orzo, white rice complements the Greek flavors in this delicious and bright salad. Setting: Hard Makes about 12 cups 4 cooker cups long-grain white rice water (to 4-cup white rice marking in cooking pot) 2 cups diced cucumber 2 cups halved grape tomatoes ¼ cup chopped fresh parsley 2 tablespoons extra virgin olive oil ½ cup chopped kalamata olives 1 cup crumbled feta 3 tablespoons fresh lemon juice ¼ teaspoon sea salt ¼ teaspoon freshly ground black pepper Put the rice and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Hard Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings and serve immediately.
