Gourmet Center Sourdough Rolls Yields: 8 Loaves Ingredients 4 cups + 1 T (21.2 oz) Bread Flour 1 cup (8 oz) Sour Dough Starter 1 3/4 cups (13.4 oz) Water 2 t Instant Yeast 2 1/2 t Salt Settings Gourmet Center \ MasterChef plus \ Bread \ Rolls Level: see display Program duration: approx. 54 minutes Method Add all dry ingredients together in stand up mixing bowl. Mix together with a whisk. Mix in sourdough starter so it is covered with the dry ingredients. Slowly incorporate water. Mix until combined. Switch to a dough hook and knead in machine for 15 minutes. Dust counter top lightly with flour. Transfer dough to counter top and knead for 5 minutes. Dough will be slightly sticky. Dust very lightly as needed. Shape into a ball and cover with plastic wrap, let rest for 2 hours on countertop. Divide dough into eight equal portions and shape into rolls. Cover with plastic wrap and let rest for 30 minutes. Place dough on universal tray. Score dough with a lame or a sharp paring knife. Make one quick slice down the center of the roll. Immediately place rolls in oven and select MasterChef Plus program for Rolls. Follow the directions in the display. 83
