THREE TOMATO SALSA Serve warm tortilla chips alongside this fresh and tangy salsa. Makes 3 cups (750 ml) Approximate preparation time: 10 minutes ½ BUNCH FRESH CILANTRO Insert the large metal chopping blade into the large work bowl of the Cuisinart® Food Processor. Put half of the cilantro, half of ½ LARGE VIDALIA ONION, CUT INTO 1-INCH (2.5 CM) PIECES the onion, garlic cloves, jalapeños, 1 teaspoon (5 ml) of salt and 1 GARLIC CLOVE half the tomatoes into the work bowl and pulse to chop to 1 SMALL JALAPEÑO PEPPER, SEEDED desired consistency, about 8 to10 quick pulses; repeat with the remaining half. 2 TEASPOONS (10 ML) SEA SALT Combine the two batches in a large bowl and stir in the lime ½ POUND (250 G) RIPE PLUM juice. Taste and adjust seasoning accordingly. TOMATOES, CUT INTO 1-INCH (2.5 CM) PIECES For better consistency, drain each batch in a strainer ½ POUND (250 ML) GREEN, to remove excess liquid. HOTHOUSE TOMATOES, CUT Serve with your favourite tortilla chips. INTO 1-INCH (2.5 CM) PIECES ½ POUND (250 G) YELLOW TIP: Salsa can be processed in one batch.
