MASHED POTATOES Try this rich but not too sinful version of the traditional mashed potatoes. Makes 7½ (1.7 L) cups, fifteen ½-cup (125 ml) servings Approximate preparation time: 35 minutes 3¾ POUNDS (1.7 KG) YUKON GOLD POTATOES, PEELED AND Place the potatoes in a large saucepan and cover with water. Bring to a boil and simmer until potatoes are tender. CUT INTO 1-INCH (2.5 CM) PIECES ¼ BUNCH CHIVES, TRIMMED, DRIED WELL AND CUT INTO Insert the small metal chopping blade into the small work bowl of the Cuisinart® Food Processor. Pulse the chives to finely chop; reserve. 1-INCH (2.5 CM) PIECES Insert the reversible shredding disc on the fine shredding side 1½ OUNCES (43 G) PARMESAN, into the large work bowl and shred the Parmesan. Reverse the CUT INTO ½-INCH (1.25 CM) disc to the medium shredding side. Once the potatoes are PIECES tender, shred the potatoes. Replace the shredding disc with the ¼ CUP (50 ML) UNSALTED large metal chopping blade. Add the butter, salt, and pepper BUTTER ¾ TEASPOON (3.75 ML) KOSHER SALT and pulse to combine. Add the milk through the feed tube while pulsing, until incorporated. Add the mascarpone and ¾ TEASPOON (3.75 ML) FRESHLY chives and pulse until just combined.
