Bake Baking tips Grease filter Remove the grease filter from the back wall. Otherwise results can be uneven. Bakeware Dark-colored bakeware is best for baking. It conducts the heat more swiftly to the mixture. Shiny metal bakeware reflects heat. Cakes baked in shiny metal bakeware take longer to bake. Bake cakes in rectangular bakeware with the longer side across the width of the oven compartment for optimum heat distribution and even results. With MasterChef programs, use the bakeware recommended in the cookbook. Shelf level When baking cakes with a moist topping only bake on one level. Use a maximum of two shelf levels at once. If you want to bake on two shelf levels at the same time, use the bottom and middle level. Parchment paper Parchment paper is only necessary when baking: - Anything with a high salt content (e.g. pretzels, bread sticks), because sodium can damage the PerfectClean surface - Meringues or dishes with a high egg white content, because they are more likely to stick - Puff pastry Universal tray Because of its PerfectClean anti-stick surface, the universal tray does not need to be greased for baking. 128
