Multi-Grain Cereal Wheat Bread Whole Wheat Bread Cycle Delay Start Timer - No Ingredients Water, 80°- 90°F Plain fat-free yogurt Unsalted butter, 1⁄2-inch pieces at room temperature Brown sugar, packed Salt Bread flour Whole wheat flour 7-grain cereal flakes Yeast, active dry, instant or bread machine Large - 2 pounds 11⁄4 cups 1⁄3 cup 3 tablespoons 2 tablespoons 11⁄2 teaspoons 2 cups 2 cups 22⁄3 cups 21⁄2 teaspoons Medium - 11⁄2 pounds 3⁄4 cup + 3 tablespoons 1⁄4 cup 2 tablespoons + 1 teaspoon 41⁄2 teaspoons 11⁄8 teaspoons 11⁄2 cups 11⁄2 cups 2 cups 2 teaspoons Small - 1 pound 1⁄2 cup + 2 tablespoons 2 tablespoons + 2 teaspoons 11⁄2 tablespoons 1 tablespoon 3⁄4 teaspoon 1 cup 1 cup 11⁄3 cups 11⁄4 teaspoons Place all ingredients, in the order listed, in the bread pan fitted with the kneading paddle. Place the bread pan in the Cuisinart™ Convection Bread Maker. Press Menu and select Whole Wheat. Press Crust and select Medium (or to taste). Press Loaf and select dough size. Press Start to mix, knead, rise, and bake. If desired, when pause tone sounds, remove dough and paddle. Shape dough into a ball and replace in bread pan. Press Start to continue. When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread slices best when allowed to cool. Variation: Select Mix-Ins and add raisins, dried cherries or cranberries: 3⁄4 cup - 2⁄3 cup - 6 tablespoons, depending upon loaf size. To prepare using Rapid Whole Wheat cycle: Select Rapid Whole Wheat, medium crust or crust to taste, loaf size. Use rapid rise yeast in place of standard yeast in recipe and add vital wheat gluten (optional - aids in rise).
