Nutty Whole Wheat Bread Whole Wheat Bread Cycle Delay Start Timer - No Ingredients Buttermilk, 80°- 90°F Salt Unsalted butter, 1⁄2-inch pieces at room temperature Maple syrup (not pancake syrup) Bread flour Whole wheat flour Yeast, active dry, instant or bread machine Mixed nuts and seeds (i.e. walnuts, pecans, pumpkin seeds, sunflower seeds) Large - 2 pounds 11⁄4 cups 1 teaspoon 11⁄2 tablespoons 11⁄2 tablespoons 11⁄4 cups 21⁄2 cups 21⁄4 teaspoons 1 cup Medium - 11⁄2 pounds 1 cup 3⁄4 teaspoon 1 tablespoon 1 tablespoon 1 cup 2 cups 21⁄4 teaspoons 3⁄4 cup Small - 1 pound 3⁄4 cup 1⁄2 teaspoon 1 tablespoon 1 tablespoon 3⁄4 cup 11⁄2 cups 2 teaspoons 1⁄2 cup Place buttermilk, salt, butter, maple syrup, bread flour, whole wheat flour, and yeast, in order listed, in the bread pan fitted with the kneading paddle. Place the bread pan in the Cuisinart™ Convection Bread Maker. Press Menu and select Whole Wheat. Press Crust and select Medium (or to taste). Press Loaf and select dough size. Press Start to mix, knead, rise and bake. When Mix-in's tone sounds, add mixed nuts and seeds. When pause signal sounds, remove dough and kneading paddle if desired, reshape dough and replace in bread pan. Press Start to continue. When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread slices best when allowed to cool. To prepare using Rapid Whole Wheat cycle: Select Rapid Whole Wheat, medium crust or crust to taste, loaf size. Use rapid rise yeast in place of standard yeast in recipe and add vital wheat gluten (optional - aids in rise).
