Steam Cooking Shellfish Preparation Defrost frozen shellfish before cooking with steam. Peel, clean and then wash the shellfish as usual. Cooking pans Use perforated pans to cook shellfish, grease them beforehand. Slide the universal tray onto the bottom shelf level. Cooking duration The longer shellfish is cooked, the tougher it becomes. Use the cooking times given in the table. When cooking shellfish in sauce or stock, it is recommended to increase the indicated cooking time by a few minutes. Preparation
