Pasta Dry pasta Fresh Settings Steam Cooking Pasta swells during cooking, therefore it must be cooked in liquid. The liquid must cover the pasta. Using hot liquid gives better results. Fresh noodles and pasta, for example, from the store refrigerator, do not swell. Fresh pasta should be cooked in a perforated pan.
