Special modes Dehydrate Only use the Dehydrate Special Mode or the Combi Steam | Combi Conv Bake operating mode to dry food so that moisture can be dissipated. Cut the food into similar sized pieces. Place the pieces on the wire rack covered with parchment paper. Tip: Bananas and pineapple are not suitable for drying in a combi steam oven.
