(Makes about 3001n1s/1/2pint) INGREDIENTS 25g/loz butter or margarine 25g/loz plain flour 300m1s/l/zpint milk salt and white pepper COOKWARE 1 litre microwaveproof jug. METHOD 1. Melt the butter in a large jug or bowl using 900W microwave power for 40-60 seconds. 2. Stir in the flour and mix to a roux. Blend in the milk gradually, stirring continuously until well combined and smooth. 3. Cook, uncovered on 900W microwave for 2-3 minutes. Stir thoroughly every 11/2 minutes The sauce should be smooth,glossy and coat the back of a spoon. Season to taste with salt and pepper. VARIATIONS: Cheese Sauce Stir in 100g(4oz) grated cheese after cooking and mix well. Parsley Sauce Stir 4 tblsps (60m1s) of chopped parsley and 1 tblsp (15m1s) of lemon juice into sauce halfway through cooking time, Mix well. Mushroom (or onion) Sauce Add 3 or 4 finely chopped mushrooms (or 1 finely chopped onion) to the melted butter, cook on 'high' for l'/2-2 minutes. Then stir in flour and follow basic sauce method. Anchovy Stir in 10m1s/2 tsp anchovy essence and a few drops of lemon juice just before serving. EASY CHOCOLATE TOPPING INGREDIENTS 2 Mars bars 45m1s/3tblsps milk METHOD 1. Roughly chop the Mars bars and place in a bowl. Add the milk and microwave, uncovered on 900W for 1 -11/2mins. Stir twice during heating. 2.
