Cooking Fish by Dual Cooking Alternatively fish can be baked using convection or grill with microwave. • Place fish in a buttered shallow heat and microwave proof dish e.g Pyrex. Season with salt and pepper, sprinkle with lemon juice and dot with butter. Do not cover the dish. Place the dish on the turntable. • For crisp breaded fillets / whole fish, place the fish directly on the low rack on the metal drip tray on the turntable, this allows for more all round crisping and gives a less moist result. • Stuffed Baked Fish Use stuffings such as apple or lemon and herb or celery and tomato - see recipes at the end of this section. Stuffed Fillets - spread the stuffing on the fish and roll up. Whole Stuffed Fish - fill the cavity with stuffing. Secure with cotton or a cocktail stick. Place stuffed fish in a buttered micro and heatproof dish. Do not cover.
