FRUITY CHICKEN CURRY (Serves 4) INGREDIENTS 15m1s/1 tblsp oil 1 onion, peeled and finely chopped 1 clove garlic, crushed 450g/11b boneless chicken meat, cut into large cubes 3Om1s/2 level tblsps medium or mild curry powder (according to taste) 15m1s/1 tblsp tomato puree 15mIs/1 tblsp lemon juice 3Om1s/2 tblsps mango chutney 25g/I oz sultanas 1 eating apple, peeled, cored and chopped 15m1s/1 level tblsp plain flour 4OOg canned chopped tomatoes 2OOmis hot chicken stock. COOKWARE Large microwaveproof mixing bowl, use a plate as a lid, or a very large casserole dish with a lid. Place on turntable. METHOD 1. Place the oil, onion and garlic in the large bowl or casserole. Cover and microwave on 900W for 2 minutes. Stir in the flour and curry powder and mix well. Stir in all the remaining ingredients and mix thoroughly. Cover and cook using microwave 900W for 10 minutes. 2. Stir well. Re-cover dish and return it to the oven. Continue to cook using microwave 450W for 25-30 minutes. 3. After cooking, stir well and serve with rice and side dishes.
