INGREDIENTS 200g/8oz self raising flour 5Og/2oz butter or margarine pinch of salt 15Om1s/ 1/4 pint milk 1 onion, thinly sliced a little oil 200g/8oz canned chopped tomatoes 15m1s/ltbIsp tomato puree 5m1s/ltsp dried mixed herbs 10Og/4oz grated cheese a few sliced mushrooms a few thin strips of green pepper 2-3 olives, halved salt and pepper COOKWARE Metal drip tray on low rack on turntable. METHOD 1. Sift the flour and salt into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Add the milk and mix to a firm dough. 2. Roll out the dough to form a round shape approximately lcmPhinch thick to form the pizza base. Place on the greased metal tray. 3. Place the oil and onion in a microwave proof bowl, cook using microwave 900W for 1-2 minutes. 4. Mix the chopped tomatoes and tomato puree together. Spread over the pizza base. Place the cheese, onions, mushrooms, peppers and olives on the pizza base and sprinkle with herbs. 5. Preheat the oven to 220°C. When the oven is preheated place the metal tray on the low rack and bake using convection 220°C for 20-25 minutes until cooked. Microwave Tip Topping Variation: Replace the mushrooms with chopped ham and continental sausage. 78
