INGREDIENTS 35Og/14oz prepared shortcrust pastry 3 eggs, beaten 300m1s/V2pint milk 6 rashers lean bacon, cut into small pieces 1 large onion, finely chopped 15m1s/ltblsp oil 100g/4oz grated cheddar cheese tomato slices salt and pepper COOKWARE 25cm/10inch heatproof flan dish. METHOD 1. Roll out pastry, line flan dish. 2. Place bacon, onion and oil in a bowl and microwave on 900W for 2-3 minutes. 3. Whisk together the eggs, milk and seasoning. 4. Spread the bacon, onion and cheese evenly over the base of the lined flan dish, top with slices of tomato. Pour the egg/milk mixture over the top. 5. Preheat oven to 180°C. Place dish on low rack on turntable in preheated oven. Cook using convection 180°C for 35-40 minutes until thoroughly cooked and golden brown. TREACLE TART INGREDIENTS 20Og/Soz shortcrust pastry (see page 70) 30Og/12oz golden syrup 5Og/2oz fine white breadcrumbs grated zest of /z lemon 1.25m1s/1/4 tsp ground ginger COOKWARE 20cm/8inch heatproof flan dish. METHOD 1. Roll out the pastry and line a 20cm/8inch flan dish. Re-roll any trimmings, cut into strips approximately lcm/V2 inch wide for decoration. 2. Mix syrup, breadcrumbs, lemon zest and ginger together. Pour filling into lined dish. Place strips of pastry over the filling in a lattice fashion. 3. Preheat oven to 200°C. When oven is preheated, place flan dish on low metal rack on turntable. Bake using convection 200°C for 25-30 minutes until golden brown. 74
