• • INGREDIENTS 200g/8oz self raising flour 5m1s/ltsp baking powder 150W6oz soft brown sugar 50g/2oz walnuts 50g/2oz raisins 100g/4oz carrots, peeled and grated 2 ripe bananas, peeled and mashed 2 eggs, beaten 150m1s/ 1/4 pint vegetable oil For the topping; 100g/4oz soft cream cheese 75g/3oz butter 250g/8oz icing sugar 2.5m1s/l/ztsp vanilla essence chopped walnuts to decorate COOKWARE Greased and lined 20cm/8inch diameter deep round cake tin. Place on turntable. METHOD 1. Mix together the flour, baking powder and sugar. Add nuts, raisins, carrots and bananas, mix well, Add the eggs and vegetable oil and mix well. 2. Transfer to prepared tin. Place tin on turntable. Bake using Dual Convection 160°C with 80W microwave power for 4555 minutes until well risen and a skewer inserted into centre comes out clean. Leave to stand in tin for 10 minutes, then cool on wire rack. 3. To make topping; Cream together the cream cheese, butter and vanilla essence. Mix in the sieved icing sugar. Spread over the top of the cake and sprinkle with chopped walnuts. Microwave Tip To swell dried fruit. Place 100g/4oz of dried fruit in a shallow dish and sprinkle with 3tblsps of water. Cover and microwave on 900W for 2-3 minutes until soft. Stir two or three times. Leave to stand. Drain and cool before using. 68
