FRUIT SCONES INGREDIENTS 250g/l0oz self raising flour 5mIs/ltsp baking powder pinch of salt 100g/4oz butter or margarine 25g/loz sugar 100g/4oz sultanas milk to mix COOKWARE Metal drip tray on low metal rack on turntable. METHOD 1. Sift the flour, sugar, salt and baking powder together. Rub in the butter and stir in the sultanas. 2. Make a well in the centre of the flour, add sufficient milk to form a soft dough. Knead lightly. Roll out to 21/2cm/1inch thickness, cut into rounds using 5cm/2inch cutter. Arrange evenly on metal tray, brush with a little milk. 3. Preheat oven to 220°C. When oven is preheated, place tray on low rack. Bake at 220°C for approximately 15 minutes or until well risen and browned. VARIATIONS Cheese Scones Omit the sugar and fruit. Add to the flour 100g/4oz grated cheese and 2.5m1s/V2 tsp dry mustard. Date and Walnut Omit the fruit. Add 50g/2oz coarsely chopped dates and 50g/2oz chopped walnuts. Orange and Cherry Scones Omit the fruit. Add '/2tsp grated orange rind and 50g/2oz chopped glace cherries. Spice Scones Add 5m1s/ltsp mixed spice with the flour. Replace the sugar with soft brown sugar. 67

Replace
the
sugar
with
soft
brown
sugar.
