CHICKEN CACCIATORE (Serves 4 ) INGREDIENTS 4 chicken portions, skinned, total weight approx. 800g - 900g,/2Ibs 100g/4oz mushrooms, washed and sliced 15 mls/1 tblsp oil 1 onion, peeled and chopped 2 cloves garlic, crushed 30m1s/2 level tblsps plain flour 150m1s/'/4 pint chicken stock (or white wine) 400g canned chopped tomatoes 30m1s/2 tblsps tomato puree 1 bay leaf 2.5mIs/Vz tsp dried oregano 1.5m1s/ tsp dried basil pinch of sugar salt and pepper METHOD 1. Place the oil, onion and garlic in a large casserole dish, cover and cook on 900W microwave power for 3 minutes. 2. Stir in the flour, blend in the stock or wine. Add all the remaining ingredients, except the chicken, stir well. Cover and cook using microwave 900W for 2 minutes. Stir well and add the chicken, ensuring it is well covered by the sauce. Cover the dish and cook using microwave 450W for 20 minutes. 3. Stir well and re-cover the dish. Return dish to the oven and continue to cook using microwave 450W for 30-35 minutes. 4. After cooking stir well. COOKWARE Large microwaveproof casserole dish with lid or a large microwaveproof bowl covered with a plate. Place on turntable. Microwave Tip Place thinner part of food towards the centre of the dish, thicker and more dense pieces towards the outside. 36
