INGREDIENTS 400g frozen flaky pastry, defrosted 1 onion, finely chopped 200g/8oz sausage meat 150g/6oz grated cheese 15m1s/ltblsp tomato puree 30m1s/2tblsps breadcrumbs pinch of dried mixed herbs 1 egg, beaten salt and pepper COOKWARE Metal drip tray on low rack on turntable. METHOD 1. Mix together the sausage meat, egg, onion, tomato puree, grated cheese, breadcrumbs, herbs and seasoning. 2. Roll out the pastry to approximately 30cm x 25cm/12 x 10inches. 3. Place the sausage meat mixture down the centre of the pastry. Moisten the edges of the pastry and seal together. Turn the pastry over so that the join is on the base. Make diagonal cuts across the top of the pastry with a sharp knife. Brush with milk. Place on greased metal tray. 4. Preheat oven to 200°C. When oven is preheated place metal tray on low metal rack on turntable, cook using convection 200°C for 35-40 minutes. Cut into slices and serve hot or cold. VARIATION Sausage Rolls. At stage 2 - Roll the pastry into two oblong shapes approx. 25x10cm / 10x8 inches. Cut each piece in two length ways. Roll meat into strips, place on pastry, roll around sausage meat and seal. Cut into equal portions. Place on metal tray. Brush with milk. Preheat oven to 220°C. When oven is preheated, place tray on low rack on turntable. Cook using convection 220°C for 15-20 minutes. 79
