LAMB KORMA (Serves 4) INGREDIENTS 450g/11b cubed lamb (or chicken) 1 large onion, chopped 25g/loz butter 2 cloves garlic, crushed 5mIs/1 tsp fresh grated ginger 10m1s/2 tsps ground corriander 10m1s/2 tsps ground cumin 5m1s/1 tsp ground turmeric 2.5nils/V2tsp ground cinnamon 300m1s/ 1/2 pint natural yoghurt 50g / 2oz ground almonds 2 tblsps fresh chopped corriander 150m1s/ 1/4 pint single cream 2 tsps cornflour COOKWARE A large microwaveproof casserole dish or bowl. Place on turntable. METHOD 1. Place the butter, onion and garlic a large microwaveproof casserole dish, cover and cook on microwave 900W for 3 minutes. Stir in the remaining spices and cook for a further 1 minute at 900W. 2. Stir in the yoghurt, lamb, ground almonds and half the coriander. Cover and cook using microwave 900W for 10 minutes. Stir and re-cover the dish, cook using microwave 450W for 20-25 minutes. Stir occasionally. 3. Combine the cornflour with a little of the cream, mix to form a smooth paste. Stir in the cornflour mix and cream 3-4 minutes before the end of cooking. 4. Garnish with remaining coriander. Serve with rice. Microwave Tip Soften or melt butter. Melting takes only a few seconds on 900W microwave power. Softening is better done more gently on 150W. 33
