(Serves 4) INGREDIENTS 450g/11b minced lamb or beef 2 large onions, sliced 30m1s/2tblsps vegetable oil 1 aubergine, sliced 200g/8oz canned chopped tomatoes 30m1s/2tblsps tomato puree 2 garlic cloves, crushed salt and pepper to taste Topping; 1 egg 150rn1s/ 1/4 pint double cream 100g/4oz cheese, grated COOKWARE A large microwave and heatproof baking dish. Place on low rack on turntable. METHOD 1. Sprinkle the aubergine slices with salt and stand for 30 minutes. Rinse and drain well. 2. Place the vegetable oil, garlic, sliced onions and minced lamb in a microwaveproof bowl, mix very well and cover with lid. Cook using microwave 900W for 5-6 minutes. Stir twice and break up minced meat with a fork. Stir in the tomato puree, chopped tomatoes and seasoning. 3. Line the base of the microwave and heatproof dish with half of the aubergine slices. Cover with the meat mixture. Arrange the remaining aubergine slices on the top. 4. Whisk the egg and cream together. 5. Pour over the cream and sprinkle with the grated cheese. Place the dish on the low rack on the turntable. Cook using Dual 210°C with 150W microwave power for 30-35 minutes. LAMB AND POTATO BAKE Follow the recipe for moussaka , omit the aubergines and replace with 450g/11b of cooked sliced potatoes. 32
