• (Serves 4) INGREDIENTS 300g/12oz frozen puff pastry defrosted 450g/1Ib lean stewing beef, cubed 100g/4oz mushrooms, sliced 1 onion, chopped 1 stick celery, chopped 30m1s/2tbIsps plain flour 25g/loz butter 300m1s/ Vz pint hot beef stock 5mIs/ltsp tomato puree 1 bouquet garni COOKWARE 18cm/7inch heatproof pie dish. Place on low metal rack on turntable. METHOD 1. Toss the steak in the flour. 2. Place butter, onion and celery in a microwaveproof dish, cover and cook using microwave 900W for 3 minutes. Stir in meat, mushrooms, tomato puree, hot beef stock, bouquet garni and seasoning, cover and cook using microwave 750W for 10 minutes, stir and re-cover. Continue to cook using microwave 450W for 30 minutes. Stir well and remove bouquet garni. 3. Place filling in pie dish and cover with pastry, make a small hole in centre to allow steam to escape. Brush with beaten egg. 4. Preheat oven to 220°C. When oven is preheated place dish on low metal rack, bake using convection 220°C for 20-25 minutes until pastry is puffed and golden. 30
