(Serves 3 - 4) INGREDIENTS 2OOg/8oz easy cook white long grain rice 6OOm1s/1 pint hot chicken stock 3OOg/1Ooz frozen stir fry vegetables 1OOg/4oz canned, sliced mushrooms, drained 2 spring onions, cleaned and chopped 25g/loz butter 3Om1s/2 tblsps soy sauce COOKWARE Large microwaveproof bowl. Place on turntable. METHOD 1. Place the rice and hot chicken stock into a large microwaveproof bowl. Cook using microwave 900W for 11-13 minutes until thoroughly cooked. 2. Stir in the vegetables, mushrooms, onions, butter and soy sauce. Cover and cook using microwave 900W for 4-5 minutes. (Serves 4) INGREDIENTS 2OOg/8oz easy cook long grain rice 2-3 rashers of bacon, cut into pieces 5Og/2oz butter 1 onion, chopped 1 stick celery, sliced i/2 green pepper, sliced 600m1s/lpint hot chicken stock 5Og/2oz mushrooms 2OOg / 8oz cooked chicken meat, diced salt and pepper CHICKEN RISOTTO COOKWARE A large microwaveproof bowl on turntable. METHOD 1. Place the butter, onion and celery in a large microwaveproof bowl cover, and cook using microwave 900W for 3 minutes. Stir in all remaining ingredients, cover and cook using microwave 900W for 15 - 20 minutes until the rice has absorbed the liquid. Stir once or twice. Stand for 5 minutes before serving. 21
