INGREDIENTS 8 medium open mushrooms 75g/3oz garlic butter 8 spring onions, chopped 1/2 red pepper, seeded and finely chopped 50g/2oz drained sweetcorn 50g/2oz breadcrumbs 75g/3oz grated cheese parsley to garnish COOKWARE Shallow microwave and heatproof baking dish. METHOD 1. Remove stalks from mushrooms. Reserve caps and chop stalks 2. Melt 50g/2oz of garlic butter in a microwaveproof bowl on microwave 900W for 30 seconds. Add chopped mushrooms, peppers and onions, cook using microwave 900W for 2 minutes. 3. Stir in breadcrumbs, sweetcorn, seasoning and half the cheese. Mix well. Spread remaining butter over mushroom caps. Place butter side down in a microwave and heatproof serving dish. Spoon filling into mushrooms and sprinkle with remaining cheese. Place dish on low metal rack on turntable. Cook using Dual convection 200°C with 80W microwave for 15-20 minutes. Decorate with sprigs of parsley before serving.
